Matsuya Main Building’s signature kaiseki featuring Kumamoto’s seasonal and regional cuisine. Savour the bounty of each season, including sashimi delivered fresh from Tazaki Market, shabu-shabu with specially selected broth, and rice cooked in a cauldron using Aso’s underground spring water.
“Matsuya Gozen”
A luxurious set meal crafted with carefully selected ingredients, served in moderate portions. Enjoy small portions of colorful seasonal delicacies, including the famous horse sashimi.
Annex restaurant: “Higo Dining Soro” offers à la carte dishes such as horse meat yakitori, Akaushi beef, and Aso Jidori chicken cooked on lava stone. Pair with local sake for a casual way to savor Kumamoto’s flavors.
